My dietician tells me to eat more fish. How do you cook fish?
Answer:
Dave - There are several quick and easy ways to cook fish.
One is to pan fry it in a minimum of canola oil with a dash of butter or margarine. To do this use a heavy based fry pan or a non-stick pan. Add the oil and butter, heat till it starts to bubble but not brown, and then add the fish.
It's best to use a skinned white flesh fish. Dust the fish in a light coat of flour with a hint of salt and pepper. Place the fish flesh side down first, and gently fry it for about two minutes each side. To test the fish gently touch it. If the fish starts to flake and the juices that come out of it are clear, not a milky colour, it's done.
Another way is to poach fish. This can be done with most fish. My favorite is salmon. To do this, simply use a deep pan or a saucepan, add enough water to cover the fish then 1 cm more. Get the water to a gentle simmer then add the fish. It can take 6 to 8 mins to cook the fish depending on the type of fish and the thickness of it.
I also normally add a few peppercorns, a bay leaf, a bit of onion, and some white wine, but these are all optional extras. There's nothing better than a nice piece of poached fish and a fresh garden salad for dinner.
